We want to offer our customers exceptionally high-quality meat. That's why we're following the new trend of vacuum-sealing meat preservation, which we consider optimal for ensuring a product that retains its nutritional value without altering its taste and texture.
Why vacuum-seal the meat?
Vacuum packaging allows for airtight packaging of food. Its primary purpose is to block contact between the meat and external oxygen, which can quickly degrade its quality and shelf life. Furthermore, because the meat continues its maturation process within the vacuum packaging, it will be even more tender when consumed.
As a general rule, meat lasts 3 to 5 times longer than regular packaging, which greatly reduces food waste.
Because the meat is delivered already vacuum-sealed, hygiene conditions are much better. The probability of contamination due to various handling steps between the producer and the retailer is considerably reduced.
Yes, once the package is opened, the aromas escaping from the meat will seem different. This phenomenon is explained in the same way as with a good bottled wine. Since the maturation process continues without external oxygen, you simply need to let it air for about fifteen minutes to allow the meat to reoxygenate.
This new trend, which is widespread throughout the world, gives us the opportunity to offer you top-quality cuts of meat from local producers.

Porc Nagano
Nagano pigs are raised with our utmost care and transported according to superior standards, which aim in particular to reduce stress on the animal.
To ensure the comfort of the pigs, our transport trucks are equipped with temperature control and a hydraulic system that facilitates loading and unloading. Nagano pig farms, located in the Montérégie and Mauricie regions, are situated near the processing plants, which reduces animal travel time.
In this way, transport time is reduced, and therefore the carbon footprint associated with production is also reduced.
Also, vacuum packaging products helps to extend their shelf life and preserve their flavors.
Flavor and tenderness
Thanks to its unique characteristics, Nagano pork is distinguished by its refined taste, exceptional tenderness, and juicy meat. Because it is butchered according to Japanese specifications, we are able to offer distinctive cuts with a longer shelf life.

Hudson Valley Farm
In Quebec, we use a French production technique that was imported in 1994 by two producers from Southwest France, Olivier and Emmanuel Nassans. Robert Caswell oversees all aspects of the duck processing, including foie gras preparation, deveining, slicing, cooking, and product manufacturing. Our excellent team is supervised by Marcus Henley, a passionate advocate for niche products.
A prime location
Saint-Louis-de-Gonzague, a municipality in the Haut-Saint-Laurent region of Quebec, is the perfect location for all stages of the process, from raising the products.
Furthermore, the region produces high-quality corn thanks to fertile land and ideal temperatures. This is essential for obtaining a beautiful and delicious foie gras.
We take great care of our ducks.
We raise nearly 250,000 Mulard ducks annually using responsible and humane practices. We believe that the quality of good foie gras depends on farmers who are committed to the well-being of their animals. Therefore, we do not use any antibiotics or vaccines throughout the entire rearing process.
The importance of a good diet
Our ducks are fed a 100% plant-based diet, with an optimal level of high-quality corn. The Muscovy duck is naturally very greedy and therefore requires a specific diet. The relationship we have built with farmers allows us to offer the best possible food to our animals.
Our entire management team is able to hatch a mulard duckling, raise it for up to 14 weeks, and then obtain cut or cooked products.
